There are two primary sources for AGEs (Advanced Glycation End products). The first source is the food we eat. The browning of food is a cooking technique that helps to give desirable flavor to food. It is achieved by heating or cooking sugars with proteins in the absence of water, and in this process AGEs are formed. Since grains, vegetables, fruits, and meat all have proteins, this browning effect is an indication of AGEs. It is estimated that 30 percent of food-borne AGEs are absorbed when ingested.

The second source for AGEs happens inside your body through normal metabolism and aging. Carbohydrates, either simple or complex, are absorbed by your body to affect your blood sugar levels. Most of your blood sugar goes to providing the energy your body needs to properly function. However, a small proportion of your blood sugar binds to proteins in your blood and creates AGEs, which can lead to many types of dysfunction, including autoimmunity.

For about three to four hours after you begin eating a typical meal, your body is operating in what is called a “fully fed state.” Essentially, your body is operating on what you just ate. From that point your insulin levels return to pre-meal levels, and the body is fueled from stored energy that is being released in a catabolic process. I call this state “maximum metabolic mode,” which is the time when the most body fat is being burned. This mode can continue for another 12 to 18 hours until you eat again. This is because your bloodstream contains a steady supply of essential nutrients to stave off the breakdown of lean body mass while your endocrine system is signaling for the release of stored energy. The moment you eat anything that provokes a significant rise in blood sugar, this maximum metabolic mode stops. Because of snacking and eating too frequently, most people spend little or no time in maximum metabolic mode.

We eat food for three reasons—to obtain building blocks (for repair, maintenance, and growth) and fuel (for energy) for our bodies, and we eat for fun. Where a lot of people get into trouble is by eating for fun when they should be eating for building blocks and fuel. Food contains foundational nutrients, such as amino acids, fatty acids, vitamins, minerals, and antioxidants for repair and maintenance of the body and contains energy (calories) or fuel for the body to operate and perform its many functions. When we eat, our bodies use the calories to produce energy and to repair and maintain body tissues. If not used, calories are stored as fat in most areas of the body. If we keep adding calories that are not being burned up, we get fat. It makes sense, then, that when it comes to calories, the key is to pack as much nutrition as possible into the lowest calorie foods that one can comfortably eat.

Will your dinner tonight be a “Smart Meal”?

Check out this quick and tasty Smart Meal from The Super Health Diet–Chicken and Spinach Soup with a large green salad and cup of cold goat’s milk.  This satisfying, delicious and complete meal provides 36 grams of protein per serving.  Bon Appetit and Enjoy!
 
Chicken and Spinach Soup
1/2 cup chopped free-range, organic chicken
1 cup organic chicken broth
1 tablespoon olive oil
1/2 cup chopped organic onion
1/2 cup chopped organic celery
1/2 cup chopped organic spinach
1/2 cup diced organic new or red potatoes
1-2 cloves crushed organic garlic (or more to taste)
Season to taste
 
Sauté celery, onion, potatoes and garlic in olive oil over low to medium heat for 15 minutes.  Add broth and chicken, cook on low heat until potatoes are cooked through, add spinach, salt and pepper and simmer over low heat for 15 minutes.
 
Side Salad 
Add a large salad of your favorite fresh organic mixed salad greens with a light vinaigrette dressing, 1/2 cup sliced avocado, 4 ounces of low-fat or 1% cottage cheese, 1/4 cup Brazil nuts and 1/2 cup fresh raspberries.  Also try apple cider vinegar mixed with extra virgin olive oil for a terrific homemade salad dressing!
